Let's say I found a piece of land that I might be intersted in, how do I go buy finding the owner of the property?

First thing would be to look up the courthouse records.  Many jurisdictions now have them available online.

choose the state, then the county

You can go to the towns registery of deeds(usaully a dollar per page around here), some are online like posted above. You could also have a local real estate agent get them for you if you work with one.
